An evening of Iron and Wine (A guest post by Katherine)

An anemic since birth, I scored tickets to see the band Iron and Wine, which seemed like the perfect excuse to make an iron rich meal. Unfortunately, my friend Leah who purchased the tickets does not eat red meat, my usual first choice for iron.

“Can’t we just focus on the wine part?” she asked.

A reasonable request but since this blog is partly owned by my 15-year-old sister, I thought I’d make most of the post under-21-friendly.

So, I created some Iron and Wine Quinoa…

Did you know quinoa, shrimp, mushrooms and spinach are all great sources of iron? Ok fine tomato. You can be in the photo too even though you only have 1%.

I sautéed together some shrimp, mushrooms and tomatoes with white wine, butter and garlic salt. I added spinach last and through it all on some cooked red quinoa.

Since this meal ended up being pretty healthy, I thought I’d make some dark chocolate and almond cookies. Dark chocolate and almonds are also excellent sources of iron.

And while “everything looks perfect from far away,” I actually burned the bottom of the cookies. Luckily, Leah prefers burned cookies, a useful trait in a friend when you bake often.
